In this demonstration, sulfuric acid is poured on a mixture of sucrose and sodium carbonate. The resultant reaction produces a large amount of black foam, as well as steam and smoke! The reaction in this experiment is:
C12H22O11 11H2SO4 → 12C 11H2SO4 11H2O
In this reaction, the acid dehydrates the sucrose, leaving only the carbon. Water vapor, and possibly some sulfur dioxide, are given off, causing the formation of a foam.
